Today in 'Nutrition Changes In Food' class, doctor lectured about ascorbic acid. One of the slide is talk about ascorbic acid basic biological function. It states that 1 of the function is to relieve stress.

Therefore, I noted down "Stress? Eat orange!" But then Polar saw my notes and write a word below my sentence. She wrote "Lemon". Yeah yeah..Ascorbic acid. Lemon got a lot too. Eat me then~lol...

After that, doctor lectured about ascorbic acid intoxication. However, he popped out a sentence, "Actually food contains little trace amount of vitamins, because our body don't need much also, you can eat 10 orange per day also OK" O.O 10 orange....I am in stress now...Give me 10 orange please~ Cat that sit beside me said: "Later will turn to orange face." =.=''''

"Come and play with me!" the tree said.

"I am getting old. I want to go sailing to relax myself. Can you give me a boat?"“said the man.

"Use my trunk to build your boat.You can sail far away and be happy."

So the man cut the tree trunk to make a boat.

He went sailing and never showed up for a long time.

Finally, the man returned after many years.

"Sorry, my boy. But I do not have anything for you anymore.No more apples for you..." the tree said.

"No problem, I do not have any teeth to bite" the man replied."No more trunk for you to climb on"

"I am too old for that now" the man said.

"I really cannot give you anything...The only thing left is my dying root,”the tree said with tears.

"I do not need much now, just a place to rest.I am tired after all these years" the man replied.

"Good! Old tree roots are the best place to lean on and rest. Come, come sit down with me and rest." The man sat down and the tree was glad and smiled with tears...

[ Special to Lemon's beloved youngest aunt ]

She is a teacher, and she is my aunt. After about six years, Lemon decide to write something to show my appreciation to what she had done for me and my siblings.

She is smart, she is lovely, she is clever, and she is intelligent.

In 2003, I was still in secondary school. Although I was already 15 years old , family members just kept her illness as a secret and did not tell me what was happening. I can just guess what was going on while I am also scared to know the truth. One night, my brother told me the truth, it was hard to accept, yes, hard, but I had to! Because it was the truth.

One afternoon, she told grandma about her illness. She was crying and yammering, and I just listened to what she said, hiding in my room, lying on my bed, but could not close my eyes to take a nap.

Her illness was getting worse and worse..

I still remember that afternoon, atmosphere was dull. Brother and I walked into her room, quietly and carefully. I sat against the wall while my brother come near to her bed. She was lying there, with a tired look. I still remember that scene, and I bet I won't forget that moment forever. Brother was holding her hand, and telling her, he will be a researcher and invent a medicine which can treat the cancer since the disease make her to suffer and had a hard time.

She listened to it, and answered slowly, " as long as you put effort, no matter what you want to study or what you want to research, I will be satisfied." And now, brother becomes a biotechnologist, a researcher. He really researching about cancer. I know he can make it. =) I think she will be happy to see what my siblings achieve so far if she can see or know in her world now.

December, 2003. You left. I started to think back the moment that you played with me just like a small kid, hugging and fooling * I hope I can hug you again, as tight as I can *; the moment you lectured me when I did my homework poorly; the moment that you scolded me badly when my maths work was full of red; and also the moment you taught me drawing. I am still keeping your art, because they are so precious.

You love me, you love us, you love the family. I know it. Rest in peace, my beloved aunt. Your spirit will always stay with us.

Let's talk some stuff out of food, yea~Lemon's new idol..haha..In fact, I don't have much idol in my life, some is just admire for one or two month. What can I remember is an idol in my secondary school life, Fish Leong. I love her song that time, of course her song recently is not bad also.

Love Twins before,although many people say that they are not really good in singing, even speaking also can't speak nicely, but I love their youth, their energetic look, their song style and include their healthy image. Well, so call IMAGE, and all ruins by the bad news. SIGH. I will still love their nice songs, still wanted to take a look of them, but I won't tell others I love Twins or my idol is Twins. Everybody say they like to lie, I won't agree,but I won't talk much about this.

After that, I did not prefer any artist. I will just like certain songs, certain drama, certain characters, certain movie, certain show, but I will not prefer any artist.

Last two months, my wind blow to Korea. Yea..Korean. Handsome guys and pretty girls. All start from a drama. Then even start to hear Korean songs. Start to try and enjoy Korea meal. Somehow, this cannot last long. Why? I think because of the languange.LOL...When get some video clips that do not have English subtitle or Chinese subtitle, I cannot understand what they talking about *SIGH* For the Korea song, I cannot understand the lyrics. However, lyric is very important to me!!! Although I will go search for the translation of the lyrics, but it cannot give me the true feelings of it since translation is hard to carry out the original taste and feel.

And thus, my wind blow back to Hong Kong. Yea...Cantonese, I know it well. It doesn't matter for me either is there any subtitle..HAHAHA. He, a guy who can a little bit more influence me. Environment issue, the message he always like to send to us. His frank talking style which always bring some news or problems for him, his caring for his fans, his preference to stay at home rather than go to PUB and so on and so on. How many artist will help to keep equipments and fold clothes ( clothes that prepare for him to capture a series of photos) for the staff??I don't know. But he is. I don't dare to say he is really good or perfect guy, somehow, I just like to say, YEAP, he is my idol, he called Sammul Chan, he is an actor. An artist who can make me feel touching of his attitude. Meaning of idol, I can learn something good from him or her =)

P/S: Erm, hope his image won't ruin one day. LOL...*WISH*

Process of heating food rapidly to predetermined temperature, holding it at this temperature for a predetermined time, and then either rapidly cooling the food or passing it to subsequent processing without delay.

Importance if blanching:
1. Preparation of fruits and vegetables before canning, freezing or dehydration.
2. To inactivate or destroy enzyme substrates such as peroxidase.
3. Cleaning raw material and reducing bacterial load.
4. Expelling cellular gases.
5. Softening foods so that filling foods to the containers is facilitated.
6. Improving textures especially for dehydrated foods.

Methods of blanching:
Food immersed in water and then heated to blanching temperature - cause a high loss of soluble in some food.

Utilizes saturated steam at atmospheric pressure - food is conveyed through the steam chamber for a pre-set time, then discharged to a washer or cooler.

Heat-resistance enzymes found in most vegetables:
Peroxidase
- Play a role in oxidative deterioration of vegetables during storage. Used as an index of the effectiveness of blanching treatments.

Added Food Colours

Natural colours are the approved extracts from fruits, vegetables, spices and insects used to colour our food.

Cochineal, an intense red colouring material obtained by extraction of the dried female bodies of the insect Cocus cacti, is most frequently utilised as Cochineal Carmine, its aluminium lake form, which is oil dispersable and insoluble in most solvents except alkali. The lake colour exhibits excellent light fastness and good temperature and pH stability. Its uses are in preserves, confectionery coatings, baked goods, yoghurts and retorted canned food. Cochineal extract itself, is water soluble and can be used in soft drinks, wines and spirits.

Composed of 10 to 20 panellists with 3 to 4 replications by each panellists for each treatment. Use for discriminatory tests and identification of specific product attributes, qualities or characteristics (Trained or untrained panel).

Hmm...with this choice, Lemon can choose 1 elective course, so for sure, I will choose dairy technology.

Experiment On Muffin

Experiment: Chemical Preservation Of Food

Purpose: To evaluate the effect of preservative concentration on muffins

Short Intro:
A chemical preservative can be defined as a substance which when added to food can retard, block or slow the processes of decomposition, fermentation and acidification of that particular food.

Equipment: Mixer, baking pan, texture analyzer, colorimeter

Material: Egg, butter, flour, castor sugar, baking powder, Calcium Propionate (Chemical)

Formulation:
Formulation A: 250g butter, 250g castor sugar, 250g egg, 250g flour, 5g baking powder
Formulation B: same as A, but added 500ppm Calcium Proponiate
Formulation C: same as A, but added 1000ppm Calcium Proponiate
Formulation D: same as A, but added 1500ppm Calcium Proponiate

Procedures:
1.Preheat the oven at 180C.
2.Weigh the ingredient based on those formulation. If you are homemade, then is Formulation A. 3. Mix the butter and sugar with mixer at medium speed (no.4) for ~10 minutes until creamy and fluffy.
4. Add eggs one by one and blend at medium speed (no.4).
5. Sieve the flour, baking powder, and calcium proponiate and add little by little into the mixer and blend at slow speed (no.2) for about 1 minute until properly mixed.
6. Pour into a paper cups placed on baking sheets and bake at 180C for 45-60 minutes.
7. Allow to cool on a wire rack and pack the muffins in separate plastic bags (Day2, 4,.....,14). Keep at room temperature for up to two weeks.
8. Record the changes in physical appearance, color, texture, and odor for every two days for two weeks. Obeserve and record any signs of deterioration . Record the time when the sample start to release unpleasant odor.

光阴似箭，日月如梭，众人所期待的一年一度榴莲飘香的季节终于像乡村姑娘般徐徐而临。前些日子，果园叔叔们忙得不可开交，连续不断地将榴莲运载到城市的各个角落。水果店的商人们也迎着它们的来临，将一箩箩的榴莲摆放到店里。

顿时，城市不知不觉地热闹起来。冷冷清清的街道开始门庭若市，盼望着吃榴莲的人们人山人海，拥挤得水泄不通。大街小巷都挤满了黑压压的人头，看来榴莲的吸引力可真不小。一些水果摊的叔叔将榴莲堆积在地上，榴莲香味顿时浓厚地扑鼻而来。

一些看起来似乎对榴莲经验丰富的老手，拿起榴莲往这里敲敲，那里打打，看看榴莲是否合乎自己的心意。一些则带着一家大小到摊位前选购。当然，讨价还价声也不绝于耳。他们的嗓门儿可真大，将原想不二价的摊主逼得无计可施，只好听从减低价钱。喧哗声音此起彼落，凑成一曲激烈的旋律，使人有一股冲动刺激的感觉。

一些青少年约了朋友到摊位前选购，他们选了几粒榴莲后，干脆在摊前大块朵颐一番。爸爸当然也不例外，他带着我们一家大小到市场凑凑热闹。一来可以尝到美味的榴莲，二来又可以乘此机会享受天伦之乐，可说是一举两得。我们到了摊位前，熙熙攘攘地，终于让爸爸选到了榴莲。我们一家人到摊位一旁尝榴莲。

爸爸向摊主借了一把刀，将榴莲剖开。望着黄澄澄的果肉，我们几个兄弟姐妹不禁垂涎三尺，迫不及待想尝尝。我慢条斯理地拿起榴莲，享受它的滋味。榴莲可真好吃，我们吃得津津有味。此外，爸爸也告诉我们榴莲有“万果之王”的美称。我听了也觉得没错，青松松的外壳陪衬着一个个的尖刺，看来似乎是一位不畏艰辛的勇士。然而，外壳里头却有一个个像乡姑般温柔的果肉，可真令人垂涎三尺。

榴莲这般靠着外表引人注目的本领，而果肉却有另一番风味，难怪人们会抱着不到黄河心不死的念头去买闻名的榴莲。已是晚上十一时了，街市仍是一片繁华景象。榴莲飘香的季节可是一年一度的日子，大家都舍不得榴莲季节就这样悄悄地来，拂一拂衣袖，就悄悄地离去，不带走一片热闹的云彩。

我爱榴莲飘香的季节，因为这个季节适宜老幼，更是众人的喜爱。我非常盼望榴莲飘香的季节能够尽快地到来，让我们共享天伦之乐。终于，榴莲的香味结束了，只希望下一次能够再为我们季节及街道带来充满热闹及欢笑声的景象。

Blanching

Blanching is a heat treatment process generally applied to fruits and vegetables prior to freesing, drying or canning.

Blanching is primarily carried out to inactivate enzymes before freezing or dehydration.

In plant tissues, enzymes such as lipoxygenase and polyphenol oxidase cause loss of nutrition, flavor and texture.

Peroxidase and catalase are two of the most heat resistant and widely distribute enzymes. Although they are not the cause of deterioration during storage, their activity is used to evaluate the effectiveness of blanching.

In commercial blanching, the blanching time in boiling water at 100C varies from 1.5 to 4 min.

The two most common method used commercial methods are passing food through atmosphere of saturated steam or bath of hot water.

The cooling stage may result greater loss of product or nutrients than blanching stage.

Simple Strawberry Milk Recipe

Strawberry Milk

Ingredients: 1 cup fresh strawberry, 1 cup whole milk, 1-2 tablespoons sugar

Yield: 2 servings

Nutrition Info: 144 calories, 4 grams fats ( 2 grams saturated fat ), 24 grams total carbohydrates, 2 grams fiber, 4 grams protein

Steps:

Fill a tall glass with one cup of fresh strawberries.

Add one cup of whole milk plus a couple spoonfuls of sugar.

Blend the whole thing together until smooth using a hand blender or traditional blender.

If you enjoy fat free dairy products, a glass of strawberry milk will give you a rich and luxurious taste^^

Merguez is a red, spicy sausage from North America, primarily Algeria and Tunisia, it is not a Moroccan sausage. Merguez is also popular in France, Belgium and the German state of Saarland. Merguez is made with lamb or beef, and flavoured with a range of spices, however paprkia, cayenne or harissa, a hot chili paste gives it a red color. It is traditionally made fresh and eaten grilled or with couscous. Sun dried merguez is used to add flavor to tagines. The name comes from the Arabic mirqaz.

Semi-dry sausage

Chinese sausage or lap cheong, which is usually coarsely chopped. Sodium chloride and sugar are added, plus sometimes cooked rice as a further carbohydrate source. Garlic and pepper is often used as seasoning. The sausage are packed in thin casings which allows rapid drying as the temperature is raised to 35-45C for 2-3 days. The temperature is then reduced to 20-25C to allow further ripening. Normally, all these Chinese sausages are cooked by steaming before eating, which provides an extra safety hurdle.

Dried Sausage

Pepperoni is heavily-seasoned dried fermented sausage, which is smoked. It is usually made from pork or beef, which may be mixed and other meats, such as lamb may be included. Relatively small diameter casings are normally used, and molds of Penicillum and Aspergillus spp. may contribute to flavour by growing the surface during maturation.
